316L stainless steel is the one common building wire that works in both wattage mode and temperature control, which is why it is worth keeping a spool of it even if Kanthal is your usual choice. Kidney Puncher's version is DFARS-compliant wire milled in the USA, supplied here on a 30ft spool. Its resistance sits slightly below N80 at the same gauge, so expect a shorter ramp than Kanthal.

The practical complaint about stainless is springiness: many 316L wires refuse to hold a compressed coil and unwind as soon as you let go. Kidney Puncher anneal theirs to the same hardness as their Kanthal, which by their account lands it between KA1 and N80 in stiffness, so builds that work with either of those should transfer across without a fight. If you have tried stainless before and gave up on it for that reason, this is the version worth a second attempt. Choose 26GA for a lower resistance per wrap and a slower ramp, or 28GA for quicker heating and easier handling in tighter builds.
